I see a bunch of menu items in SQL Editor in File menu related file formats and encoding, characters sets, and code pages. Several of them are set to Default or ANSII when a new tab is open.

What do Defaults mean here and is there a way to modify those defaults (eg Unicode or UTF-8 instead of ANSI, Central Europe for Character set and Unicode(UTF-8) for Code page)?

The "Default" values apply most to existing files, if you open a file and leave the default value, it will be saved with the original encoding, format, code page. If you change any of these options, when you save your file, it will be saved with the new encoding, format, code page.
