In the Job Properties Wizard, we setup our jobs to send us e-mails on job errors. We have a test system and a production system, but when the automated e-mails are sent, there is no differentiation between the two. Is there anyway to customize the subject and/or content of these automated e-mails?

I'm afraid there is no easy way to change the subject or message. What you can do is to choose different email accounts for sending messages or use the same account and customize its human readable name, enter it like "TEST SERVER" sender@company.org and/or "PRODUCTION SERVER" sender@company.org
This way, you can easily recognize which server sent the email
