When I'm executing :
./setup.sh nogui

Is there a way to specify a certain home directory, and not use the default /usr/local
?

You can try
./setup.sh nogui path_to_install

You also copy the setup files to the the directory where you want to install it and then from there execute ./setup.sh nogui
