This is a feature by design. We parse column names for Excel export, and convert them to human readable names. Underscores and dashes get replaced with spaces, camel case names like ShipingAddress get separated by words. There are other cases, that behavior is intended. If you have noticed, Open in Excel does some other things too, like making column headers bold, applying conditional formatting to the worksheet, etc...

If you need the original column names and plan data without any formatting, please use Save to... menu and choose CSV or XLS or some other file type. The Save function copies data to files without formatting the output for display.
